Resort Hires Internationally-trained Executive Chef

Locals’ Favorite Mathias Klemmt Returns to Angel Fire Resort

ANGEL FIRE, New Mexico (September 29th, 2009) – Angel Fire Resort today announced Chef Mathias Klemmt has returned to the resort after a six year hiatus to take on the role of Executive Chef. Klemmt’s return was spurred by the creation of a fine dining facility in the resort’s new $15 million, 27,000 square foot country club scheduled to open in the spring. Coming on board now, he will have the opportunity to shape the dining venues for the new clubhouse. Klemmt will also oversee the food preparation for the newly re-designed Caliente Grill located in the Lodge at Angel Fire Resort.

Mathias’ expertise will lead our kitchens to reflect the new direction. He has a reputation for producing unique menus and serving consistent, quality, cuisine at an affordable price. Classic-French trained, Klemmt has developed a well rounded diversity in cuisine throughout his twenty-one years in the food industry. He has held a variety of positions in five star restaurants throughout Europe, including the Kulm Hotel and Park Hotel Vitznau in Switzerland. He has worked alongside such world-renowned chefs as Raymond Blanc from France, David Sharland from the Savoy Hotel in London, and Feinkost Kaefer from Munich, Germany.

Born and raised in Germany, Klemmt started his love affair with northern New Mexico in 1998 when he moved to the United States to work as the Executive Chef for The Bavarian in Taos, NM. This small luxury Bavarian / Austrian themed restaurant and lodge allowed him to experiment with traditional German, Austrian and Swiss dishes while adding a modern, lighter touch incorporating southwest elements. The result was a hugely successful business operation with completely unique cuisine.

In 2001, Klemmt made the move to Angel Fire, NM where he oversaw all elements of the former country club fine dining restaurant. His responsibilities included meal preparation, menu development, kitchen staffing, food purchasing and banquets and special event catering. Since leaving Angel Fire in 2003, Klemmt has worked in a variety of aspects in the food industry and most recently made the move from Denver, Colorado back to New Mexico.
