Executive Chef – Elements at the Country Club

This position is responsible for leading Elements fine dining restaurant as well as banquet and catering functions at the Country Club. Essential duties include but are not limited to:

•Leads, trains & mentors all kitchen personnel to execute dishes to a standard consistently while creating a strong team
•Designs menus using locally sourced ingredients whenever possible ensuring that ingredients and items are changed based on seasonality and always creative
•Purchases and manages inventory.
•Maintains a super clean, organized, and sanitized kitchen at all times.
•Interacts directly with Club Director for special event planning, budgeting, and desired event execution.
•Develops, grows and maintains vendor relationships.
•Reviews menus, analyzes recipes, determines food, labor, and overhead costs, and assigns prices to menu items.
•Directs food apportionment policy to control costs.
•Supervises cooking and other kitchen personnel and coordinates their assignments to ensure economical and timely food production.
•Observes methods of food preparation and cooking, sizes of portions, and garnishing of foods to ensure food is prepared in prescribed manner and at proper cost margins.
•Devises special dishes and develops recipes.
•Familiarizes newly hired Chefs and Cooks with practices of kitchen and oversees training of Cook Apprentices.
•Develops banquet menus and establishes cost of goods and labor for banquet fulfillment.
•Trains back of the house catering crew for banquets and special events.
•Establishes and enforces NM Health Department Food Service and sanitation standards for restaurant.
•Adheres to and participates in the company safety program.

This is a salaried, year-round, benefited position. Benefits include health, dental, vision, and life insurance, 401k, and paid time off. Must be able to work flexible hours including weekends and holidays as required by the nature of our Resort business.

We are looking for professional, hardworking, and talented applicants who have at least three years of Executive Chef and kitchen leadership experience — with a record of achieving a well-trained, motivated, safety conscious, happy, hardworking team of employees. Resume must demonstrate high volume production and resort experience. Applicants must display a solid understating of all NM Department of Health regulations as applicable to food service and have the ability to maintain compliance with those standards at all times.

Starting pay depends on experience plus great benefits!
